Farm Update: Fresh Ingredients After the Rain

Here is the latest update from the kitchen garden at Happy Herb Farm in Chiang Mai. After several weeks of heavy rain, the farm is looking wonderfully lush. The soil is moist, the leaves are bright green, and new fruit and vegetables are appearing throughout the garden.

Rainy days can change the rhythm of farm life, but they also bring energy and colour to the tropical plants. This is an especially beautiful time to see how many familiar Thai ingredients grow before they reach the market or kitchen.

What Is Growing at Happy Herb Farm?

Our papaya trees are carrying plenty of young green fruit. Green papaya is crisp and refreshing, and it is best known as the main ingredient in som tam, Thailand’s much-loved spicy papaya salad.

The red chillies are adding flashes of colour among the leaves. Chillies are central to many Thai recipes, from curry pastes and stir-fries to dipping sauces. Nearby, clumps of lemongrass are growing tall and fragrant. This aromatic herb brings a fresh citrus flavour to soups, curries, marinades, and herbal drinks.

We are also watching our green brinjals grow. Sometimes called Thai eggplants, these small vegetables are often used in Thai green curry and other local dishes. Their gently bitter flavour and firm texture work especially well with rich coconut milk and fragrant herbs.

From the Farm Garden to the Cooking Class

These ingredients are not only part of the scenery. When produce is ready, guests joining our Thai cooking classes may pick fresh herbs and vegetables from the garden before heading to the kitchen. It is a simple but memorable way to understand where Thai flavours begin.

Learning to cook with fresh ingredients makes the class more meaningful. Guests can smell lemongrass straight from the plant, see how chillies ripen, and discover the difference between young green papaya and ripe fruit. This garden-to-kitchen experience is one of the pleasures of cooking at a farm in Chiang Mai.
